Catering can be a huge profit center in your operation. You may already do some form of catering including pasta trays and large numbers of pizzas for pickup or delivery. You may even do some onsite catering with hot foods heated by propane canisters under metal trays, but have you thought about expanding into the colder foods area such as a salad bar or cold pastas and desserts? Have you run into problems keeping foods cold at these offsite events?
