Welcome
to the second issue of PMQ Canada! I took a trip to Canada
earlier this year to learn more about the Canadian pizza market. This
first trip landed me in Toronto
where I was able to meet with lots of great operators. With a little
help from some members of our editorial board, our consulting editor,
Tom Boyles, I was able to learn about some new marketing ideas
we’ll be sharing with you in this issue and future issues.
Here’s

Our
cover story focuses on a unique marketing idea—great food.
Dante Paoletti and his four brothers run a very successful Toronto
pizzeria. Dante has someone at his store almost 22 hours a day
preparing the fresh ingredients for his Italian dishes and pizzas.
Dante has his entire family working for him—four brothers and
his father. He also works only with families for his products. Read
about how he manages it all on page 52.

This new
section of PMQ brings you recipes from around the world. This issue
features a loaded potato pizza from Dominic Tedesco of the U.S. Pizza
Team, a mudhoney pizza from Theo Kalogeracos of Australia
